Schnapps project
What is it ?
The “schnapps project” is a project achieve by 23 engineering students who mostly will become chemistry and material sciences engineer.
The point of this project is to create wine and schnapps, starting of raw materials. The 23 students run all this project on their own from the press of the fruits to the bottling. To do that, we separate our self in 5 teams.
1: Budget team
This team is in charge of each financial transactions needed for the project. This student buy raw materials, allows expenditures an pay the taxes.
2: Event team
Once the project finished, a party with all students, sponsors and teacher concern by it is organised to taste the wine and the schnapps. This team is in charge to organise it. There are also responsible of the distillery visitation.
3: Fermentation team
Even if all the students take part of the labs, it’s this team which has to make calculus about it and write the operational mode. They also check everything’s right during the lab.
4: Distillation team
Like the fermentation team which lead during the fermentation step, the distillation team take the lead just after, when we have to distil a part of the wine to make schnapps.
5: Packaging and website team
This last team is in charge of the graphic identity of the product. It also supervise the creation of the website.
This year's production
This year, we chosen the peer as raw material. We created the “Chateau Montéfiore” wine and the “L’Alchimiste” schnapps. We used about 170kg of bio peer to make 37L of wine at 17° and 40L of 20° wine which we distil to get 10,7L of schnapps at 40°.
