Schn'apple Wine 2018: Story of the project


The Bachelor project is a 3rd-year course in the Bachelor of Civil Engineering in Chemistry. The goal of the project is to make wine from a fruit of our choice, apple, and to distil some of this wine to make the schnapps. It enabled the students to familiarize with distillation and fermentation processes. The project has also joined the industrial organization and group work.

 

First, the students were divided into five groups of different functions. Week after week, each group had to present their progress to the other groups and the supervisors.

 

The first group, the budget and taxes group, had to deal with the search for sponsors, the distribution of the 400 euros budget (granted by the faculty of Applied Sciences) allocated to the entire project and the payment of the tax. to the state according to our production.

 

The second group, the website and design group, had to develop this website and look after bottles and corks for schnapps and wine, as well as designing our label.

 

The next group, the event and organization group, had to organize the presentation party of our products to the members of the chemistry department and to our sponsors, organize the visit of a distillery and set up a schedule to follow day by day for the advancement of the project.

 

The fermentation group had to develop the recipe and the fermentation process.

 

The distillation group had to do the same for the distillation process.

 

However, given the complexity of the tasks, everyone got involved in each of them and the groups helped each other.

 

As for our supervisors, they advised us, listened, guided but also reprimanded throughout this project to make it a success.

 

As for the design of our product, the grinding of the apples was done in Verlaine (Buttiens) while the washing of the bottles was taken charge by Prayon. Then, all our activities took place at the Hall of Chemical Engineering such as distillation, fermentation but still bottling.

 

The visit of the distillery took place at Dr. Clyde's in Seraing. It made us discover the main stages of the distillation process that we could then realize on a smaller scale.

 

To top it off, we contacted the Web TV of the University of Liège to cover our project.
